We can also make kraut with other shredded vegetables - Ginger Carrot Kraut is always a big hit! We'll also make curtido - a spicy Salvadorian version of sauerkraut for those looking for a little pizzazz. Both add zest to your meals or salads, going especially well with sausages, cooked apples and tacos! Kickin' Kimchi
Kimchi is a traditional Korean condiment that can be very hot and spicy. You can tailor it to suit your taste or to what you have available. It's central ingredients are cabbage, carrots, radishes, ginger, garlic and chilis, plus just about any vegetable and spice you want to add. Like sauerkraut, it adds a punch to your meals and soups, supports digestion, packs powerful compounds that assist with gut healing, and nourishes your gut flora.

Brine (Pickled) VeggiesPerhaps you or someone in your family is a picky eater? Or not too keen on eating fermented anything? Brine pickles are a familiar way to integrate the health benefits of fermented foods into anyone's diet. And you don't have to wait until late summer to try. How do Dill Carrots or Pickled Beets sound? These are often kids' favorites and easy to pack in lunches. Brine pickling is the simplest ferment, and less intensive than canning. The outcome is both delicious and nutritious!
